So pleased to meet you! I’m starting this blog to serve as a community outreach project for the Nutritional Therapy Practitioner (NTP) program I’m completing through the Nutritional Therapy Association. I plan to keep blogging after graduation. My goal is to share with you my personal experience with nutrition and to share information I’ve learned through my studies. I hope to help you make positive choices when navigating the “what should I eat” dilemma we experience daily.
My journey to optimal nutrition began when a naturopath recommended a gluten and dairy-free diet to my husband. When he told me he wanted to try this, I literally cried! How were we going to eat without gluten and dairy? For most of my life, I ate a Standard American Diet (otherwise known as “SAD”) and couldn’t imagine eating any other way. After I recovered from the initial shock, I slowly found new recipes and realized it was possible to make meals – delicious meals, gluten and dairy-free.
Some time passed, and I visited a naturopath wanting to balance my hormones and improve fertility. She recommended doing a detox/elimination diet, as she suspected I had some food sensitivities. My husband and I decided to try thirty days on the paleo diet. After just a few days of eating this way, we both felt so much better and energetic that we never looked back.
About a year later I experienced several stressful events simultaneously and started having some digestive issues. I’d read about a version of the paleo diet called the “autoimmune paleo diet,” which temporarily eliminates common allergens like eggs, nuts/seeds, nightshade vegetables (tomatoes, white potatoes, eggplant, chili peppers), coffee, chocolate, etc. Desperate to resolve my digestive issues, I decided to give it a try. Within a couple of days my symptoms improved immensely. Seven months later, I remain on the autoimmune paleo diet to heal my gut and hopefully reverse some of my food sensitivities. In addition to greatly improving my digestion, this diet has helped balance my hormones more than anything I’ve tried.
It’s amusing to me now to think I went from crying about eliminating gluten and dairy to being excited about healing my body through eliminating even more foods with the paleo and autoimmune paleo diets. As I’ve learned more about food sensitivities on my own and through my studies, I’ve become confident these dietary changes are giving my body a good chance to heal from the inside out. I’ve seen my hormones balance, my skin clear, and my allergies diminish. Even my kitchen has transformed as a result with unhealthy foods gone and nourishing foods stocked in the pantry and refrigerator. Through this journey I have also really grown to love cooking and want to share that love with you!
